These are traditional Chinese walnut cookies. Originally, they were not made with walnuts. Part of the Chinese word for walnut (tao 桃) is a homonym for the Chinese word for clay (tao 陶). Legend says that a ceramist used to bake some cookie dough next to the kiln so he could have a snack. Over time, the “tao (pottery)” evolved to “tao (walnut).”

As we at Cha Bay know…wood-firing takes many days, and it would be nice to bake up some cookies on the kiln while stoking the fire! Whether or not this legend is true – WE BELIEVE IT, and are delighted to offer this traditional treat.

You can still find many walnut-less versions sold in shops. Like America’s chocolate chip cookie, there are endless variations to the Chinese walnut cookie. Cha Bay’s version is crisp, crumbly, and packed with walnuts and sesame seeds.
